Bain Marie's (porringers) are the only choice if you are looking to melt chocolate or make a delicate sauce such a hollandaise or buerre blanc. They work by gradually heating the contents of one pan, resting inside a second, often containing boiling water. It is the water that helps insulate the contents of the second pan preventing it from boiling or burning as it will never reach a temperature over 100 degrees Celsius.
