Our Special Steel The AMG knife collection is crafted from the finest grade DIN 4116 German high carbon stainless steel. Each step of the production process is manually inspected to ensure that each knife will live up to the expectations of the Scanpan brand.

Our Special Edge The blade of each AMG knife is specially designed to allow maximum "straight edge" all the way to the finger guard. Most forged knives have a thick forged guard that prevents a straight through sharpening stroke to be made resulting in a hollowed out appearance over time.

Our Special Handle AMG stands for Anti Microbial Grip and refers to the Biba IRGAGUARD antimicrobial agent infused into the handle material. This antimicrobial agent guards againts the growth of bacteria and reduces the potential for odour, staining and overall deterioration of the handle. Scanpan AMG is also the first knife handle to extrude past the join points to ensure that bacteria do not get underneath the grip material.

Our Special Blade Ice Hardening Scanpan AMG knives go through a special ice hardening process which greatly benefits the molecular structure of the steel and gives longer edge retention and corrosion resistance.
