Kumi Kumi is a traditional Maori pumpkin originally called kamo kamo and considered particularly good for the hangi. It is a speckled green, heavily-ribbed pumpkin with white sweet, buttery-flavoured flesh growing to 30 cm. Immature, tennis ball-sized fruit can be used like zucchini or squash.

Boiled: Peel kumi kumi and potatoe and chop into similar sized pieces. Place in a pot of salted boiling water and cook until soft. Mash with butter, sea salt and pepper.

Sautéed: Cut the kumi kumi into slices and sauté in a pan with olive oil over medium-high heat until just soft. Remove the kumi kumi and set aside. Add wine vinegar and gently heat, use a spatula to lift anything that is stuck. Add honey, sea salt and pepper to taste and cook until blended. Pour sauce over the kumi kumi and serve.

Braised: Cook onions, several cloves of garlic, kumi kumi cubes and mushrooms in a little olive oil with bay leaves and thyme, then add red wine and stock and simmer until the kumi kumi is nearly cooked. Stir in torn up pieces of stale bread - use a heavy grainy bread for best results. Season and cook slowly until everything is soft. Serve topped with parmesan cheese. This keeps well in the fridge and is good reheated as the flavours will meld.

Roasted: Preheat oven to 175°C. Cut the kumi kumi into small pieces. Coat with olive oil and place on an oven tray. Bake for 20-40 minutes (length of time depends on the size of pieces) until soft.

Pan Fried: Slice kumi kumi. In a pan melt garlic butter, add the kumi kumi and let them caramelise until tender. Sprinkle with parmesan cheese, sea salt and pepper to serve.
