Claytonia perfoliata or Montia perfoliata Winter Purslane.
These succulent leaves were named "miner's lettuce" because they were eaten by the early gold miners.
To use just collect the greens, rinse well and use like lettuce. Pick as needed as plants regrow readily.
The leaves taste similar to spinach. You can steam the leaves and stems and eat like any green. Use the tender leaves raw in salads.
Miners lettuce does not grow stale or bitter as it ages but remains delicate and mild through its entire life cycle.
It can tolerate moderate frost and be grown all winter long in temperate climates.
