Redwall 1939 was created by Chairman Mao's Executive Chef 'Cheng Ruming'
Since 1992, Cheng's grandson 'Liu Jian' has learnt his grandfather's fine art for creating Chinese Dishes of utter splendour, which will now be served at Redwall 1939 in the Rose Gardens of Parnell. Auckland.
To assist Liu Jian in the kitchen we require:
Senior Sous Chef - This is very much a hands on role where you will lead from the front with shared responsibility of the day to day running of the kitchen. You will need to be someone who enjoys the fast pace of the kitchen and can consistently produce top quality dishes. You will take shared responsibility for the running of the kitchen, but also know when and how to delegate. Your experience coming from high end Asian restaurant background with a wide knowledge of Asian cuisine techniques is essential. You must have a true passion for food and a fresh clean approach to plating and presentation of dishes for our customers.
Sous Chef - We require a Sous chef or very talented Chef de partie with at least 3 years experience. This is a very responsible role with key duties:
Running the kitchen when the head chef/Senior sous chef is not on duty.
Must have previous experience in Asian Cuisine in a similar role a
Needs to be comfortable managing a busy kitchen with a high level of consistency and creativity.
have outstanding organisational and communication skills.
Implementing and maintaining procedures is paramount.
To follow all food hygiene guidelines in accordance with H&S and Food Control Plan
Chef de partie - This position requires assisting the head and sous chef. The right candidate will be punctual, responsible and flexible. Key duties will be preparing mis en place and assisting the head and sous chef in all aspects of the kitchen
all applicants must be eligible to work in NZ and should have new Zealand residency or a valid work visa.
