Basically they give you much more accurate readings of the heat inside your engine compared to water or oil temps, a real finger on the pulse of the situation. The metals of your head, pistons, rings soften or melt at certain temperatures, an egt gauge will let you know when to back off the accelerator to protect your engine from softening or melting parts!

Water temps generally stay static on the gauge whether the engine is labouring or not. With an EGT gauge as the engine labours you will see the EGTs rise dramatically, ease off the accelerator and you will see the EGTs drop.
