This wheeled stainless steel blancher was designed for use as a commercial mussel cooker. It took a 25kg sack of mussels in shell and cooked the batch in 7 minutes. The cooker is Fine for other shellfish and also as large catering boiler - eg at the Marae. The product to be cooked is within a stainless steel inner 450mm x 870mm high and the cooker also comes with a second basket 390mm x 700mm high.

It has dual water cycling drums one of which has a gas burner element under it to preheat and works on the principal of the cooking chamber being 80% filled with water which holds the product. Water is recycled through a second chamber which has heating elements and temperature probe.

The whole system was rebuilt in 2008 and has barely been used since.
