Bread scoring lame knife for scoring/slashing bread in artisan baking just before the bread is placed in the oven to allow the dough to properly expand in the oven without tearing the crust.
Made in Japan, brand Yoshiyo (a major supplier of commercial baking equipment), excellent quality.
Plastic handle with stainless steel rod with notches/small teeth to hold the blade in tension.
Overall length 16cm, rod 6cm
Virtually new, I only used it a couple of times before switching to a different type of bread which doesn't require scoring.
Comes with 4 extra double sided blades.
