This is an odd volume. The title page says volume I and pages I-XVI refer to volume I. Then it continues with p. 333-380, 415-430, 481-495, 609-624, 641-656, 705-735, 801-816, 897-912, 1089-1104, 1265-1280, 1701-1720.
The book was originally published in 5 volumes and bits of these volumes were bound together in this tome.
There are many colour plates, two are fold out: the pig, the ox.
The colour plates show different cuts of meat, organs, preserved meats, hams and sausages, meat infected by various diseases etc. The b/w plates show abbatoirs, butcher tools and knives etc.
A fascinating, well illustrated book despite its faults.
