What is Methylglyoxal?

Methylglyoxal is the compound identified as the active ingredient primarily responsible for the antibacterial activity in Manuka Honey. The higher the methoyglyoxal level the greater the antibacterial activity. This discovery was first made by Professor Henle, from Dresden University (Germany), and confirmed later by the University of Waikato in New Zealand.
