Head Chef

About the role

The Head Chef leads all kitchen operations for the Hamilton Workingmen's Club, including daily Restaurant service, catering for members, and delivery of high‑quality food for functions and events. The role ensures consistent food standards, cost control, staff leadership, and full compliance with New Zealand food safety legislation and the Club's Food Control Plan. The Head Chef contributes to menu development, operational planning, and the overall member experience.

Key responsibilities

• Oversee all kitchen operations, ensuring efficient, safe, and high‑quality food production.
• Maintain a strong presence in the kitchen during service, supporting staff and ensuring smooth workflow.
• Ensure all food is prepared to consistent standards of quality, presentation, and portion control.
• Manage daily prep schedules, service timing, and coordination with FOH and events teams.
• Maintain a clean, organised, and compliant kitchen environment always.
• Develop seasonal menus, daily specials, and function menus aligned with Club expectations and member preferences.
• Ensure full compliance with the Food Act 2014 and the Club's Food Control Plan.
• Recruit, train, roster, and supervise kitchen staff, including chefs, cooks, and kitchen hands.
• Manage food costs, portion control, and wastage to meet budget targets.
• Work with the General Manager and events team to plan and deliver catering for functions, conferences, and Club events.

About you

• Proven experience as a Head Chef or Senior Chef in a commercial kitchen.
• Strong leadership and team management skills.
• Excellent knowledge of food safety, hygiene, and the Food Control Plan.
• Experience with menu planning, cost control, and stock management.
• Ability to work under pressure and manage multiple priorities.
• Flexibility to work evenings, weekends, and public holidays.
• A focus on continual improvement.
