Description

Our client is seeking a skilled and reliable Knife Hand to join our venison processing team. This role is essential in ensuring safe, efficient, and high‑quality carcass and meat processing. The ideal candidate will have strong knife‑handling skills, good attention to detail, and a commitment to maintaining high standards of hygiene, safety, and product quality.

Key Responsibilities

Perform precision knife work including:

Skinning, Boning, trimming, slicing, and portioning venison cuts

Breaking down carcasses according to company specifications

Maintain sharp knives and tools to ensure clean, efficient cuts

Follow all food safety, hygiene, and quality assurance standards

Operate within a fast‑paced processing line while maintaining accuracy

Identify and remove defects, contamination, or non‑compliant product

Assist with general processing plant tasks as required

Comply with Health & Safety requirements, ensuring a safe working environment

Work collaboratively with teammates and supervisors to meet daily production targets

Skills & Experience

Required:

Proven experience with knives in a processing environment (meat, fish, or similar)

Ability to work safely with sharp tools

Good physical fitness and stamina-ability to stand for long periods and perform repetitive tasks

Strong attention to detail and commitment to product quality

Reliability, punctuality, and a positive attitude

Previous experience in a meat processing plant, ideally venison or other red meat

Understanding of food safety and hygiene regulations

Personal Attributes

Strong work ethic and willingness to learn

Team‑player mentality

Consistency and focus during high‑volume production

Ability to follow instructions and protocols accurately
