Xylitol is a naturally occurring five-carbon sugar alcohol found in berries, fruit, vegetables, and mushrooms, such as raspberries, strawberries, yellow plums, and endive. It is also produced by the body in the normal metabolism of glucose. It is the sweetest of the sugar alcohols and is as sweet as sucrose but with 40% fewer calories than sugar. Xylitol also enhances flavors while providing a cooling sensation.

After eating, bacteria in the mouth are fermented by carbohydrates, especially sucrose, to produce acid. This reduces the pH level and increases acidity, causing demineralization, which contributes to tooth decay.
