Jerusalem artichoke is a plant related to a sunflower, originally from America and used by the native Americans, main crop used in Europe to feed the masses until it fell out of favor due to the introduction of the potato. It produces an edible tuber that is high in inulin (not the same as insulin), vitamins and fiber. Has a nutty taste, can be roasted, made into soup etc. Plenty of recipes online. Caution does need to be taken when eating artichoke for the first time until the stomach adjusts to them, adding lemon juice or similar methods to help reduce this issue or you will have bad gas after eating them and you will reach mars before Musk does.
