Summary

The sai-03 is a full-sized santoku knife, designed for slicing, dicing, and mincing. Its flat, deep, and powerful blade is ideal for western-style cooking, especially for cutting heavy root vegetables like sweet potato, squashes, and celeriac. The Global Sai collection is crafted by skilled Japanese craftsmen in Yoshikin's factory, featuring an ergonomic thumb-rest handle for ease of use.

The blade is made from special Cromova 18 Sanso material with three layers of stainless steel. The central cutting edge is hardened to Rockwell 58-59 and honed for excellent cutting performance. Softer SUS410 stainless steel layers protect against chipping, rusting, and staining. A hammered finish on the blade sides creates air pockets for better food release and non-stick properties.
