Beautiful green & red edible leaves for fresh or cooked use in oriental stir-fries. Tasty, highly nutritious greens. The seeds are also edible & are a protein-rich pseudo grain.

Amaranth, aka Chinese Spinach, is used as a leaf vegetable, salad green, sprout or micro-green. Excellent in soups, stews & stir-fries. Fast growing. Very nutritious. Heat tolerating hardy annual.

Amaranth loves heat. Pick leaves as required or harvest whole plant at maturity. Sometimes grown as an ornamental. Sow direct. Young leaves can be used when the plant are about 20cm tall. Sow every fortnight for a continuous harvest.

Originally from South America, particularly Peru. Did You Know that Amaranth leaves have three times the calcium & five times the niacin of spinach leaves!

• Sow and grow from AUG to APRIL depending on climate zones as follows:

~ COOL/MOUNTAIN : SEPT to NOV ~ SUB-TROPICAL : AUG to APRIL ~ TEMPERATE : SEP to MAR

• Best soil temperatures: 18-30°C
• Sow direct or transplant.
• Sow after risk of frost
• Sowing depth : 6 mm
• Germination: 8-10 days
• Space plants 10 to 30 cm apart
• Needs: Full sun, moist soil.
• Days to Maturity: 45-55 (Sprouts 4 days, Micro-greens,14-21)
