No only does it cools it also heats to 80 degrees c. This allows to slow cook. Once internal temp is reached it holds it or chills it. There is a specific pasteurising program. Good for packed foods. A Regeneration program to heat up foods. A specific program for safely defrosting frozen products. It can take bakers tray 60x40 and gastronorm trays. This machine requires 3 phase power.
