Burdocks roots and leaves are also a very old food which is still popular today in Japan. Burdock was naturalized in New Zealand in 1886. Burdock has many benefits and is a nutritious vegetable and medicinal herb used as a remedy for measles, arthritis, tonsillitis, viruses like colds, throat pain, and as a diuretic. Burdock makes a wonderful addition to any herb garden. I grows to 2 metres x 1 metre. Plant stalks can be cooked like celery and the root is eaten raw or cooked like parsnips.
