Spring/Summer/Autumn - Burdock is a highly nutritious root vegetable popular in Asian cuisine, especially in Japan. It is rich in minerals and vitamins, and used medicinally as a blood cleanser and diuretic which helps lower blood pressure. It can help with a bunch of other things such as aiding with pain relief, treating colds, and helping with body help overall.

In well broken up soil, the roots can grow to 1m in length. Young roots can be peeled and used as a radish substitute, while older roots can be used in stir fries, roast medley or pickled.
