Watercress comes from the cabbage or mustard family Brassicaceae. Plant in gravel, sand, silt or clay within slow-moving water as little as 2 to 4 inches deep (5-10 cm). Water is vital to growing watercress.

As a semi-aquatic plant it thrives in permanently wet conditions, either partially submerged or grown in soil regularly refreshed with clean, clear water. It cannot grow in a stagnant environment.

Has a dense, sprawling growth habit, propagating freely from leaf nodes which is why you sometimes see fine hair-like white roots on bagged watercress salad from supermarket. Leaves are mid-green, ranging between three to nine leaflets growing on hollow stems.

Has a vigorous growth rate. Can be harvested in as little as four to seven wks. Treat as a cut-and-come-again salad for continuous lush growth from spring to late autumn. Leaves become bitter after flowering. So, frequent harvesting will keep watercress producing leaves for longer.

Watercress is grown primarily for its tasty leaves which are best consumed raw to get the most nutritional value. Leaves can also be cooked in soups & stir-fries or wilted like spinach.
